Ingredients

3 garlic cloves,
quartered
-
30 ml/2 tbsp wine
vinegar
-
50 g/2 oz/1 small can
anchovy fillets, drained

90 ml/6 tbsp olive oil
-
2.5 ml/1/2 tsp salt
-
2.5 ml/1/2 tsp freshly
ground black pepper

Lettuce leaves, to serve
Method:

Chop the anchovies into 1 cm/1/2 in pieces. Put the
garlic pieces and vinegar into a bowl, stir well,
and allow to stand for at least 1 hour.

Press the
garlic pieces against the side of the bowl with the
back of a spoon, and discard them.

Add the anchovies,
oil, salt and pepper. Toss. Serve on a bed of
lettuce.
