Italian Appetizer (Antipasti) Recipes - Anchovies and Garlic (Acciughe e Aglio) Recipe

Ingredients

  • 3 garlic cloves, quartered

  • 30 ml/2 tbsp wine vinegar

  • 50 g/2 oz/1 small can anchovy fillets, drained

  • 90 ml/6 tbsp olive oil

  • 2.5 ml/1/2 tsp salt

  • 2.5 ml/1/2 tsp freshly ground black pepper

  • Lettuce leaves, to serve


Method:

  1. Chop the anchovies into 1 cm/1/2 in pieces. Put the garlic pieces and vinegar into a bowl, stir well, and allow to stand for at least 1 hour.

  2. Press the garlic pieces against the side of the bowl with the back of a spoon, and discard them.

  3. Add the anchovies, oil, salt and pepper. Toss. Serve on a bed of lettuce.
