Italian Appetizer (Antipasti) Recipes - Anchovy Dip (Salsa Acciughe) Recipe

Ingredients

  • 12 salted anchovies

  • 4 garlic cloves, crushed

  • 30 ml/2 tbsp olive oil

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter

  • Gorgonzola Savories, to serve


Method:

  1. Wash and drain the anchovies and remove any bones. Chop.

  2. Put the anchovies in a saucepan with the garlic and slowly add the oil. Cook for 15 minutes over a low heat.

  3. Stir in the butter and blend well. Serve hot with Gorgonzola Savories.
