Ingredients

4 globe
artichokes, leaves, stalks and
chokes removed
-
15 ml/1 tbsp lemon
juice
-
300 ml/1 1/4 cups chicken or vegetable stock
-
15 ml/1 tbsp olive
oil
-
30 ml/2 tbsp white
wine
-
Salt and freshly
ground black pepper
Method:

Place the artichokes in a pan with
10 ml/2
tsp of the lemon juice and the stock.

Bring to the
boil, cover and simmer for 30 minutes until just
tender. Remove the artichokes from the pan and
drain on kitchen paper.

Heat the oil in a separate
pan and fry (sauté) the artichokes for 3 minutes.
Add the wine and remaining lemon juice and cook for
3 minutes.

Strain the stock into the pan and cook
over a high heat for about 5 minutes until the
liquid has reduced slightly. Season to taste. Allow
to cool.

Arrange the artichokes on small plates,
either whole or cut into small pieces. Pour over the
sauce.
