Ingredients

6 canned anchovy
fillets, mashed

150 g/5 oz/2/3 cup Ricotta cheese

75 g/3 oz/1/2 cup
olives, stoned (pitted) and chopped

15 ml/1 tbsp chopped
fresh thyme

Juice of 1/2 lime
-
Salt and freshly ground black pepper
Method:

Blend the anchovies into the Ricotta cheese and mix
until smooth. Stir in the olives and thyme.

Mix in
the lime juice and season with the salt and pepper.
