Italian Appetizer (Antipasti) Recipes - Bologna Cheese (Formaggio Bolognese) Recipe

Ingredients

  • 6 canned anchovy fillets, mashed

  • 150 g/5 oz/2/3 cup Ricotta cheese

  • 75 g/3 oz/1/2 cup olives, stoned (pitted) and chopped

  • 15 ml/1 tbsp chopped fresh thyme

  • Juice of 1/2 lime

  • Salt and freshly ground black pepper


Method:

  1. Blend the anchovies into the Ricotta cheese and mix until smooth. Stir in the olives and thyme.

  2. Mix in the lime juice and season with the salt and pepper.
