Ingredients

900 g/2 lb potatoes
-
12 garlic cloves,
peeled but left whole

8-12 shallots, peeled but left
whole

100 g/4 oz/1/2 cup butter, melted
-
2 sprigs of thyme
-
2 sprigs of rosemary
-
Salt and freshly
ground black pepper

Ciabatta, to serve
Method:

Cut the potatoes in
2.5 cm/1 in chunks and place in a very large
saucepan with the garlic, shallots, melted butter
and 60 ml/4 tbsp water.

Cover with a lid. Cook for 5
minutes. Season with the salt and pepper
and add the herbs.

Pour into an ovenproof dish and
roast in a preheated oven at 220°C/425°F/gas mark 7
for 35 minutes or until tender and golden. Serve hot
with Ciabatta bread.
