Italian Appetizer (Antipasti) Recipes - Caramelized Potatoes, Shallots and Garlic (Patate e Scalogne Caramelizare All' Aglio) Recipe

Ingredients

  • 900 g/2 lb potatoes

  • 12 garlic cloves, peeled but left whole

  • 8-12 shallots, peeled but left whole

  • 100 g/4 oz/1/2 cup butter, melted

  • 2 sprigs of thyme

  • 2 sprigs of rosemary

  • Salt and freshly ground black pepper

  • Ciabatta, to serve


Method:

  1. Cut the potatoes in 2.5 cm/1 in chunks and place in a very large saucepan with the garlic, shallots, melted butter and 60 ml/4 tbsp water.

  2. Cover with a lid. Cook for 5 minutes. Season with the salt and pepper and add the herbs.

  3. Pour into an ovenproof dish and roast in a preheated oven at 220°C/425°F/gas mark 7 for 35 minutes or until tender and golden. Serve hot with Ciabatta bread.
