Ingredients

450 g/1lb potatoes,
grated
-
1 red onion, chopped
-
275 g/2 1/2 cups
hard cheese, grated
-
30 ml/2 tbsp
chopped fresh coriander (cilantro)

Freshly ground black
pepper
-
25 g/2 tbsp unsalted (sweet) butter
Method:

Mix the potatoes, onion, cheese, coriander and
pepper together in a bowl and shape into 8 round
cakes.

Squeeze out any excess liquid and leave to
drain on kitchen paper for 1 minute.

Melt the butter
in a frying pan (skillet) and cook the cakes on each
side until brown and crispy. Serve hot or cold.
