Ingredients

225 g/8 oz courgettes
(zucchini), grated
-
45 ml/3 tbsp plain
(all-purpose) flour
-
2 eggs
-
10 ml/2 tsp chopped
fresh sage

1 garlic clove,
crushed
-
Salt and freshly
ground black pepper
-
75 ml/5 tbsp oil
Method:
-
Mix the courgettes, flour, eggs, sage and garlic in
a bowl and season with salt and pepper.
-
Heat the oil
in a pan and drop 15 ml/1 tbsp of the mixture for
each fritter into the hot oil.
-
Cook until golden on
both sides, drain on kitchen paper and serve hot.
