Italian Appetizer (Antipasti) Recipes - Courgette Fritters (Fritelle di Zucchini) Recipe

Ingredients

  • 225 g/8 oz courgettes (zucchini), grated

  • 45 ml/3 tbsp plain (all-purpose) flour

  • 2 eggs

  • 10 ml/2 tsp chopped fresh sage

  • 1 garlic clove, crushed

  • Salt and freshly ground black pepper

  • 75 ml/5 tbsp oil


Method:

  1. Mix the courgettes, flour, eggs, sage and garlic in a bowl and season with salt and pepper.

  2. Heat the oil in a pan and drop 15 ml/1 tbsp of the mixture for each fritter into the hot oil.

  3. Cook until golden on both sides, drain on kitchen paper and serve hot.
