Crispy Fried
Mozzarella (Mozzarella in Carrozza) Recipe
Ingredients

8 canned anchovies,
drained
-
8 thick slices bread,
crusts removed

8 slices Mozzarella cheese, cut 1 cm/1/2 in thick

3 ripe tomatoes,
skinned, seeded and sliced

Salt and freshly
ground black pepper

3 eggs, beaten
-
Oil for frying

Chopped fresh oregano
Method:

Cut each anchovy in
half. Cut the slices of
bread in half.
-
Cover eight slices of bread with
cheese, anchovy and tomato and season with salt and
pepper.

Cover each with a slice of bread to make a
sandwich and dip in the beaten egg.
-
Turn to coat the
other sides of the bread and leave to stand for 40
minutes.

Heat the oil in a shallow frying pan
(skillet) and cook the sandwiches until crisp and
lightly browned on both sides.

Drain and serve hot
sprinkled with the oregano.
