Italian Appetizer (Antipasti) Recipes - Crispy Fried Mozzarella (Mozzarella in Carrozza) Recipe

Ingredients

  • 8 canned anchovies, drained

  • 8 thick slices bread, crusts removed

  • 8 slices Mozzarella cheese, cut 1 cm/1/2 in thick

  • 3 ripe tomatoes, skinned, seeded and sliced

  • Salt and freshly ground black pepper

  • 3 eggs, beaten

  • Oil for frying

  • Chopped fresh oregano


Method:

  1. Cut each anchovy in half. Cut the slices of bread in half.

  2. Cover eight slices of bread with cheese, anchovy and tomato and season with salt and pepper.

  3. Cover each with a slice of bread to make a sandwich and dip in the beaten egg.

  4. Turn to coat the other sides of the bread and leave to stand for 40 minutes.

  5. Heat the oil in a shallow frying pan (skillet) and cook the sandwiches until crisp and lightly browned on both sides.

  6. Drain and serve hot sprinkled with the oregano.
