Italian Appetizer (Antipasti) Recipes - Eggs and Liver (Uova e Fegato) Recipe

Ingredients

  • 6 chicken livers

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp olive oil

  • 90 ml/6 tbsp white wine

  • 1 small onion, chopped

  • 45 ml/3 tbsp tomato puree (paste)

  • 4 eggs

  • Focaccia Bread, to serve


Method:

  1. Cut the chicken livers into small pieces and season with salt and pepper.

  2. Heat the olive oil in a saucepan and cook the chicken livers for 4 minutes. Remove the livers and pour in the wine.

  3. Add the onion and simmer for 3 minutes. Add the tomato puree and cook for 5 minutes.

  4. Return the livers to the sauce, break the eggs into the pan and cover with a lid. Cook for 4 minutes.

  5. Carefully lift out the eggs with a fish slice and place on warm plates. Spoon over the sauce and serve with Focaccia.
