Cucumbers (Cetrioli alla Fiorentina) Recipe
Ingredients

Salt
-
1 large cucumber, cut
into chunks
-
30 ml/2 tbsp olive oil
-
2 garlic cloves,
crushed
-
Freshly ground black
pepper
-
60 ml/4 tbsp tomato
puree (paste)
-
15 ml/1 tbsp chopped fresh thyme
-
15 ml/1
tbsp chopped fresh tarragon
Method:

Sprinkle salt over the cucumber pieces and allow to
drain on kitchen paper for 10 minutes.

Heat the
olive oil in a frying pan (skillet) and add the
crushed garlic. Cook until golden.

Add the cucumber
to the pan and fry (sauté) for 3 minutes.
-
Blend in
the remaining ingredients and simmer for 5 minutes.
Transfer to a warmed serving dish.
