Italian Appetizer (Antipasti) Recipes - Florentine Cucumbers (Cetrioli alla Fiorentina) Recipe

Ingredients

  • Salt

  • 1 large cucumber, cut into chunks

  • 30 ml/2 tbsp olive oil

  • 2 garlic cloves, crushed

  • Freshly ground black pepper

  • 60 ml/4 tbsp tomato puree (paste)

  • 15 ml/1 tbsp chopped fresh thyme

  • 15 ml/1 tbsp chopped fresh tarragon


Method:

  1. Sprinkle salt over the cucumber pieces and allow to drain on kitchen paper for 10 minutes.

  2. Heat the olive oil in a frying pan (skillet) and add the crushed garlic. Cook until golden.

  3. Add the cucumber to the pan and fry (sauté) for 3 minutes.

  4. Blend in the remaining ingredients and simmer for 5 minutes. Transfer to a warmed serving dish.
