Italian Appetizer (Antipasti) Recipes - Fondue Italienne (Fonduta all Italiana) Recipe

Ingredients

  • 1 garlic clove, halved

  • 300 ml/1 1/4 cups milk

  • 225 g/8 oz/2 cups Mozzarella cheese, grated

  • 225 g/8 oz/2 cups Dolcelatte cheese, chopped

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated

  • 10 ml/2 tsp corn flour (cornstarch)

  • 45 ml/3 tbsp dry white wine

  • 2 large apples, peeled, cored and quartered

  • 175 g/6 oz salami, thinly sliced

  • Crusty bread, cut in chunks


Method:

  1. Rub the inside of a fondue pot with the cut clove of garlic. Add the milk and heat until bubbling.

  2. Stir in all the cheeses and continue to heat until melted, stirring all the time.

  3. Blend the corn flour with the wine and stir into the cheese mixture. Cook for 4 minutes, until thick and creamy.

  4. Serve with apple quarters, slices of rolled up salami and chunks of bread to dip in.
