Italian Appetizer (Antipasti) Recipes - Fricassee of Artichokes (Fricassea di Carciofi) Recipe

Ingredients

  • 4 globe artichokes, leaves, stalks and chokes removed

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 1 garlic clove, crushed

  • 2 egg yolks

  • 30 ml/2 tbsp water

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp lemon juice

  • 15 ml/1 tbsp chopped fresh parsley

  • 25 g/1 oz/2 tbsp Parmesan cheese, grated


Method:

  1. Simmer the artichoke hearts in plenty of boiling water for 30 minutes. Drain well and cut in quarters.

  2. Heat the butter in a saucepan and cook the garlic for 1 minute. Add the artichoke hearts and the measured water and cover with a lid.

  3. Simmer for a further 5 minutes, stirring occasionally. Beat the egg yolks with the lemon juice and grated cheese.

  4. Stir into the artichoke mixture and cook very slowly, stirring, for 5 minutes without boiling.
