Ingredients

4 globe artichokes,
leaves, stalks and chokes removed

25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
1 garlic clove, crushed
-
2 egg yolks
-
30 ml/2 tbsp water
-
Salt and freshly
ground black pepper
-
15 ml/1 tbsp lemon juice
-
15 ml/1 tbsp chopped
fresh parsley

25 g/1 oz/2 tbsp Parmesan cheese, grated
Method:

Simmer the artichoke hearts in plenty of boiling
water for 30 minutes. Drain well and cut in
quarters.

Heat the butter in a saucepan and cook the
garlic for 1 minute. Add the artichoke hearts and
the measured water and cover with a lid.

Simmer for
a further 5 minutes, stirring occasionally. Beat the
egg yolks with the lemon juice and grated cheese.

Stir into the artichoke mixture and cook very
slowly, stirring, for 5 minutes without boiling.
