Italian Appetizer (Antipasti) Recipes - Fried Marrow (Zucca Fritta) Recipe

Ingredients

  • 3 small marrows (squash), peeled

  • Oil for frying

  • 1 garlic clove

  • 2 eggs, beaten

  • 50 g/2 oz/1 cup fresh breadcrumbs

  • Salt and freshly ground black pepper


Method:

  1. Cook the marrow in boiling, salted water for 10 minutes. Drain. Cut each marrow into 1 cm/1/2 in slices and remove the seeds.

  2. Heat a little oil in a shallow pan. Crush the garlic and beat into the eggs. Dip each marrow slice into the beaten egg and then the breadcrumbs.

  3. Fry (sauté) the marrow for two minutes until brown on both sides, season and serve while still hot.
