Italian Appetizer (Antipasti) Recipes - Garlic Stuffed Eggs (Uova con Ripieno d' Aglio) Recipe

Ingredients

  • 8 hard-boiled (hard-cooked) eggs

  • 1 garlic clove, crushed

  • 50 g/2 oz/,4 cup unsalted (sweet) butter, softened

  • 60 ml/4 tbsp double (heavy) cream

  • Salt and freshly ground black pepper

  • 5 ml/1 tsp chopped fresh sage Lettuce leaves


Method:

  1. Cut the tops off each egg and set aside. Trim the bases so the eggs will stand up. Scoop out the egg yolks and place in a bowl.

  2. Add the garlic and butter and mash together until they form a paste. Mash in the cream, salt, pepper and sage.

  3. Spoon equal amounts into the hollowed out eggs and press the tops back on to the eggs. Serve chilled on a bed of lettuce.
