Garlic and Tomato
Peppers (Peperonata) Recipe
Ingredients

30 ml/2 tbsp olive oil
-
1 red onion, sliced
-
1 onion, sliced

2 red (bell) peppers,
thinly sliced

2 yellow (bell)
peppers, thinly sliced

2 green (bell) peppers, thinly
sliced

2 garlic cloves, crushed
-
6 large tomatoes,
skinned, seeded and chopped

Salt and freshly ground
black pepper
Method:
-
Heat the oil and fry (sauté) the onions until soft.
Add the peppers and garlic and simmer for 15
minutes until soft and tender.
-
Stir in the tomatoes
and cook for another 30 minutes until the mixture
has thickened.
-
Season with the salt and pepper.
Turn into a serving dish and leave to cool.
