Italian Appetizer (Antipasti) Recipes - Garlic and Tomato Peppers (Peperonata) Recipe

Ingredients

  • 30 ml/2 tbsp olive oil

  • 1 red onion, sliced

  • 1 onion, sliced

  • 2 red (bell) peppers, thinly sliced

  • 2 yellow (bell) peppers, thinly sliced

  • 2 green (bell) peppers, thinly sliced

  • 2 garlic cloves, crushed

  • 6 large tomatoes, skinned, seeded and chopped

  • Salt and freshly ground black pepper


Method:

  1. Heat the oil and fry (sauté) the onions until soft. Add the peppers and garlic and simmer for 15 minutes until soft and tender.

  2. Stir in the tomatoes and cook for another 30 minutes until the mixture has thickened.

  3. Season with the salt and pepper. Turn into a serving dish and leave to cool.
