Italian Appetizer (Antipasti) Recipes - Italian style Potato Cakes (Tortine di Patata all Italian) Recipe

Ingredients

  • 1 large onion

  • 225 g/8 oz/1 cup boiled and mashed potatoes

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 2 egg yolks

  • 1.5 ml/1/4 tsp cayenne

  • 15 ml/1 tbsp chopped fresh sage

  • Oil for frying


Method:

  1. Grate or finely chop the onion. Mix the potato with the onion, butter and seasoning.

  2. Blend in the flour, egg yolks, cayenne and sage. Form into small even-sized cakes and fry (sauté) in hot oil until brown and crispy on the edges.

  3. Drain on kitchen paper before serving.
