Parcels (Verdure Pollo in Cartoccio) Recipe
Ingredients

45 ml/3 tbsp olive oil
-
2 garlic cloves,
crushed
-
10 ml/2 tsp chopped
fresh herbs

4 chicken breasts
-
450 g/1lb courgettes
(zucchini), thinly sliced

1 aubergine (eggplant),
diced
-
1 red onion, sliced
-
1 small green (bell)
pepper, chopped
-
2 tomatoes, chopped
-
Salt and freshly ground
black pepper
Method:

Blend the oil and
garlic together with the chopped herbs in a bowl.

Cut the chicken into 1 cm/1/2 in strips and add to the
marinade. Allow to marinate while preparing the
remaining ingredients.

Divide the courgettes,
aubergine, onion, green pepper and tomatoes between
four large foil squares.

Divide the chicken among
the four portions and pour over the marinade.
Season with the salt and pepper and wrap up tightly.

Cook for 20 minutes in a preheated oven at
200°C/400°F/gas mark 6. Place on warm plates,
open and serve.
