Italian Appetizer (Antipasti) Recipes - Lettuce with Peas (Lattuga e Piselli) Recipe

Ingredients

  • 1 bunch of spring onions (scallions)

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 1 round lettuce, shredded

  • 450 g/1lb peas, shelled (or 225 g/8 oz/2 cups frozen)

  • 5 ml/1 tsp brown sugar

  • Stilt and freshly ground black pepper

  • 2.5 ml/1/2 tsp grated nutmeg


Method:

  1. Chop the spring onions. Melt the butter in a pan and add the lettuce, spring onions peas and sugar.

  2. Cover and simmer gently for 5-8 minutes until the peas are tender. Season to taste with the salt and pepper.

  3. Transfer to a serving dish and sprinkle over the nutmeg.
