Ingredients

bunch of spring onions (scallions)

50 g/2 oz/1/4 cup
unsalted (sweet) butter

1 round lettuce, shredded

g/1lb peas, shelled (or 225
g/8
oz/2 cups frozen)

5
ml/1 tsp brown sugar
-
Stilt
and freshly ground black pepper

2.5 ml/1/2 tsp grated
nutmeg
Method:
-
Chop
the spring onions. Melt the butter in a pan and add the lettuce, spring onions peas and
sugar.

Cover and simmer gently for 5-8 minutes
until the peas are tender. Season to taste with
the salt and pepper.

Transfer to a serving dish and
sprinkle over the nutmeg.
