Ingredients

1 large courgette
(zucchini)

10 ml/2 tsp salt
-
75 g/3 oz/3/4 cup plain
(all-purpose) flour
-
2 eggs
-
30 ml/2 tbsp single
(light) cream
-
2 large carrots, grated
-
1 small leek, finely
shredded
-
Freshly ground black pepper
-
Oil for frying
-
Salad, to garnish

Hot Italian bread, to
serve
Method:

Grate the courgette and place in a colander.
Sprinkle with salt and leave to stand for 30
minutes.

Squeeze out the moisture from the courgettes and drain on kitchen paper.

Beat the
flour, eggs and cream together and stir in the courgette, carrots and leek. Season with the pepper.

Heat the oil and drop in tablespoons of the batter.
Cook for 4 minutes, turning once, until the fritters
are golden brown.

Serve hot with a salad garnish and
chunks of hot Italian bread.
