Italian Appetizer (Antipasti) Recipes - Metrano Onions (Cipolle Metrano) Recipe

Ingredients

  • 4 large onions

  • 2.5 ml/1/2 tsp salt

  • 1 garlic clove, crushed

  • 225 g/8 oz/2 cups cooked chicken, chopped

  • 1 small apple, grated

  • 10 ml/2 tsp chopped fresh basil

  • 5 ml/1 tsp chopped fresh oregano

  • Salt and freshly ground black pepper

  • 45 ml/3 tbsp breadcrumbs

  • 1 egg, lightly beaten

  • 10 g/2 tsp butter

  • 15 ml/1 tbsp olive oil


Method:

  1. Peel the onions and place in a large saucepan. Pour over enough water to just cover and add the salt.

  2. Bring to the boil, cover the pan and simmer for 10 minutes. Remove the onions and cut across 2 cm/3/4 in from the top of each. Discard the tops.

  3. Scoop out the middle of each onion leav­ing a shell. Chop the centers and place in a mixing bowl.

  4. Add the garlic, chicken, apple, basil, oregano, salt, pepper and breadcrumbs and beat in the egg.

  5. Spoon the stuffing into the onion shells and dot with the butter. Place the stuffed onions in an oiled ovenproof dish and pour over the olive oil.

  6. Bake in a preheated oven at 160°C/325°F/gas mark 3 for 50 minutes, basting occasionally with the oil.
