Italian Appetizer (Antipasti) Recipes - Nutty Beans (Fagiolini alle Nocciole) Recipe

Ingredients

  • 450 g/1lb French (green) beans, cut in short lengths

  • Salt

  • 15 ml/1 tbsp olive oil

  • 60 ml/4 tbsp walnuts, chopped

  • 25 g/1 oz/1/4 cup Parmesan cheese, grated


Method:

  1. Cook the beans in boiling, salted water for 8 minutes. Drain well.

  2. Heat the oil in a fry­ing pan (skillet) and fry (sauté) the nuts for 2 minutes.

  3. Add the beans and cheese and mix together. Serve immediately.
