Italian Appetizer (Antipasti) Recipes - Olive and Anchovy Paste (Pasta d' Olive e Acciughe) Recipe

Ingredients

  • 100 g/4 oz green olives, stoned (pitted)

  • 30 ml/2 tbsp capers, chopped

  • 50 g/2 oz/1 small can anchovies in oil

  • Freshly ground black pepper

  • Ciabatta bread, to serve


Method:

  1. Place the olives and capers in a blender or food processor and blend until smooth. Drain the anchovies and add to the paste.

  2. Slowly blend in the anchovy oil, a little at a time until the paste forms a soft texture.

  3. Season to taste with the pepper. Serve with Ciabatta bread.
