and Anchovy Paste
(Pasta d' Olive e Acciughe) Recipe
Ingredients

100 g/4 oz green
olives, stoned (pitted)

30 ml/2 tbsp capers, chopped
-
50 g/2 oz/1 small can
anchovies in oil
-
Freshly ground black pepper
-
Ciabatta
bread, to serve
Method:

Place the olives and capers in a blender or food
processor and blend until smooth. Drain the
anchovies and add to the paste.

Slowly blend in the
anchovy oil, a little at a time until the paste
forms a soft texture.

Season to taste with the
pepper. Serve with Ciabatta bread.
