Italian Appetizer (Antipasti) Recipes - Olive, Anchovy and Tomato Paste (Pasta d' Olive, Acciughe e Pomodoro) Recipe

Ingredients

  • 2 x 50 g/2 X 2 oz/2 small cans anchovy fillets, drained

  • 225 g/8 oz/1 1/3 cups black olives, stoned (pitted) and finely chopped

  • 30 ml/2 tbsp capers, drained and chopped

  • 1 garlic clove, crushed

  • Freshly ground black pepper

  • 15 ml/1 tbsp tomato puree (paste)

  • Italian Flat Bread, to serve


Method:

  1. Place all the ingredients except the tomato puree in a mortar or blender and pound to a rough paste.

  2. Add the tomato puree to form a spread able consistency. Serve with Italian Flat Bread.
