Italian Appetizer (Antipasti) Recipes - Olive and Basil Pate (Pate di Olive e Basilico) Recipe

Ingredients

  • 75 g/3 oz/1/2 cup green olives, stoned (pitted)

  • 150 g/5 oz/2/3 cup Ricotta cheese

  • 30 ml/2 tbsp chopped fresh basil

  • 15 ml/1 tbsp capers, chopped

  • Salt and freshly ground black pepper

  • San Severo Pastries, to serve


Method:

  1. Roughly chop the olives and stir into the Ricotta cheese.

  2. Add the basil and capers and season to taste.

  3. Serve with San Severo Pastries.
