Italian Appetizer (Antipasti) Recipes - Pan-roasted Radicchio (Radicchio in Padella) Recipe

Ingredients

  • 3 radicchio heads, trimmed

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 15 ml/1 tbsp olive oil

  • 5 ml/1 tsp grated nutmeg

  • Salt and freshly ground black pepper


Method:

  1. Wash the radicchio and dry on kitchen paper. Cut in halves and then quarters.

  2. Melt the butter in a frying pan (skillet) and stir in the oil. Lay the radicchio in the pan and cook for 4 minutes.

  3. Toss well and turn into a serving dish. Sprinkle with the nutmeg, a little salt and plenty of pepper.
