Peppers in Tomato
Sauce (Peperoni in Salsa di Pomodoro) Recipe
Ingredients

15 ml/1 tbsp oil

25 g/1 oz/2 tbsp
unsalted (sweet) butter

1 small onion, finely chopped
-
225 g/8 oz green (bell)
peppers, seeded and sliced
-
225 g/8 oz red (bell)
peppers, seeded
and sliced

1 garlic clove, crushed
-
5 ml/1 tsp chopped fresh
sage

300 ml/1 1/4 cups
tomato juice
-
Salt and freshly ground black pepper
Method:

Heat the oil and butter in a frying pan (skillet)
and cook the onion for 5 minutes until lightly
colored.

Add the peppers and garlic and continue to
fry (sauté) for 3 minutes.

Stir in the sage and
tomato juice. Season with the salt and pepper.

Simmer, uncovered, for 10 minutes, stirring occasionally until the peppers are soft. Serve hot.
