Italian Appetizer (Antipasti) Recipes - Peppers in Tomato Sauce (Peperoni in Salsa di Pomodoro) Recipe

Ingredients

  • 15 ml/1 tbsp oil

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 1 small onion, finely chopped

  • 225 g/8 oz green (bell) peppers, seeded and sliced

  • 225 g/8 oz red (bell) peppers, seeded and sliced

  • 1 garlic clove, crushed

  • 5 ml/1 tsp chopped fresh sage

  • 300 ml/1 1/4 cups tomato juice

  • Salt and freshly ground black pepper


Method:

  1. Heat the oil and butter in a frying pan (skillet) and cook the onion for 5 minutes until lightly colored.

  2. Add the peppers and garlic and continue to fry (sauté) for 3 minutes.

  3. Stir in the sage and tomato juice. Season with the salt and pepper.

  4. Simmer, uncovered, for 10 minutes, stirring occasionally until the peppers are soft. Serve hot.
