Potato Gnocchi
(Gnocchi di Patate) Recipe
Ingredients

750 g/1 1/2lb potatoes,
cut in even pieces
-
Salt and freshly ground
black pepper
-
225 g/8 oz/2 cups plain (all-purpose) flour
-
1 egg
-
15 g/1/2 oz/1 tbsp
butter
-
75 g/3 oz/3/4 cup
Parmesan cheese, grated
Method:
-
Boil the potatoes in salted water for 12 minutes
until just tender. Pass through a sieve (strainer)
and season.

Blend with the flour, egg and butter.
Form into small balls.
Cook
in boiling salted water for 3-4 minutes
or until they rise to the surface.

Remove from the
pan with a draining spoon and sprinkle with the
Parmesan cheese.
