Italian Appetizer (Antipasti) Recipes - Potato Gnocchi (Gnocchi di Patate) Recipe

Ingredients

  • 750 g/1 1/2lb potatoes, cut in even pieces

  • Salt and freshly ground black pepper

  • 225 g/8 oz/2 cups plain (all-purpose) flour

  • 1 egg

  • 15 g/1/2 oz/1 tbsp butter

  • 75 g/3 oz/3/4 cup Parmesan cheese, grated


Method:

  1. Boil the potatoes in salted water for 12 minutes until just tender. Pass through a sieve (strainer) and season.

  2. Blend with the flour, egg and butter. Form into small balls. Cook in boiling salted water for 3-4 minutes or until they rise to the surface.

  3. Remove from the pan with a draining spoon and sprinkle with the Parmesan cheese.
