Preserved Peppers
(Peperoni in Conserva) Recipe
Ingredients
Method:

Grill the peppers for 5 minutes, skin sides up,
until the skin is charred. Peel off the black skin.

Slice the peppers and pack into sterilized jars. Set
aside.

Bring the remaining ingredients, except the
oil, to the boil in a saucepan and strain the
vinegar into the jars.

Allow to cool and add the
olive oil on the top of each jar. Seal and store in
a cool, dark place.
