Potato Chunks (Pezzi di Patata al Rosmarino) Recipe
Ingredients

450 g/1lb potatoes
-
30 ml/2 tbsp olive oil
-
1 large onion, sliced
-
3 rashers (slices)
bacon, rinded and chopped
-
5 ml/1 tsp fresh
rosemary
-
50 g/2 oz/1/2 cup
Parmesan cheese, grated
Method:
-
Peel the potatoes and cut into small chunks. Place
the oil in a frying pan (skillet) and fry (sauté)
the potatoes, onion and bacon for 8 minutes until
they are browned.

Spoon into an ovenproof dish,
sprinkle over the rosemary and Parmesan cheese and
bake in a preheated oven at 180°C/350°F/gas mark 4
for 15 minutes.
