Salami with Beans
(Salame con Fagioli) Recipe
Ingredients

30 ml/2 tbsp olive oil
-
2 onions, sliced
-
2 garlic cloves,
chopped
-
Salt and freshly ground
black pepper
-
10 ml/2 tsp chopped fresh sage
-
10 ml/2 tsp chopped
fresh coriander (cilantro)
-
300 ml/1 1/4 cups
vegetable or chicken stock
-
225 g/8 oz/1 1/2 cups red
lentils
-
225 g/8 oz shelled
broad (lima) beans
-
45 ml/3 tbsp tomato puree (paste)
-
75 g/3 oz Italian
salami, cut into strips
-
Small sprigs of fresh sage, to
garnish
Method:
-
Heat the olive oil in an ovenproof casserole (Dutch
oven) and fry (sauté) the onions and garlic for 2
minutes.
-
Season with the salt and pepper and stir in
the sage, coriander, stock and red lentils.
-
Cover
and cook for 20 minutes until the lentils are
tender. Add the beans and tomato puree and continue
cooking for 10 minutes until the beans are soft.
-
Pour in more stock if necessary. Stir in the salami
and heat through. Spoon on to serving plates and
garnish with sprigs of sage.
