Italian Appetizer (Antipasti) Recipes - Semolina Dumplings (Gnocchi di Semolina) Recipe

Ingredients

  • 300 ml/1 1/4 cups milk

  • 15 g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 2.5 ml/1/2 tsp salt

  • 100 g/4 oz/1/3 cup semolina (cream of wheat)

  • 2 eggs, beaten

  • 5 ml/1 tsp ground cinnamon Butter, to taste (optional)

  • Parmesan cheese, to taste (optional)


Method:

  1. Heat the milk in a large saucepan and stir in the butter and salt. Bring to the boil and add the semolina, stirring constantly. Reduce the heat and gently simmer for 5 minutes.

  2. Remove from the heat and beat in the eggs and cinnamon. Allow the semolina mixture to cool for 30 minutes.

  3. Shape into 24 small nut-sized balls and set aside. Half fill a large saucepan with water and bring to the boil. Reduce the heat and drop the balls into the water, a few at a time.

  4. Cook for 5 minutes until they rise to the surface. Remove from the pan with a draining spoon and keep warm until required.

  5. Drizzle with melted butter and sprinkle with Parmesan cheese or serve in soup.
