- Semolina Dumplings (Gnocchi di Semolina)

Ingredients

300 ml/1 1/4 cups milk
-
15 g/1/2 oz/1 tbsp
unsalted (sweet) butter
-
2.5 ml/1/2 tsp salt
-
100 g/4 oz/1/3 cup
semolina (cream of wheat)

2 eggs, beaten
-
5 ml/1 tsp ground
cinnamon Butter, to taste (optional)

Parmesan cheese, to
taste (optional)
Method:

Heat the milk in a large saucepan and stir in the
butter and salt. Bring to the boil and add the
semolina, stirring constantly. Reduce the heat and
gently simmer for 5 minutes.

Remove from the heat
and beat in the eggs and cinnamon. Allow the
semolina mixture to cool for 30 minutes.

Shape into 24 small
nut-sized balls and
set aside. Half fill a large saucepan with water and
bring to the boil. Reduce the heat and drop the
balls into the water, a few at a time.

Cook for 5
minutes until they rise to the surface. Remove from
the pan with a draining spoon and keep warm until
required.

Drizzle with melted butter and sprinkle
with Parmesan cheese or serve in soup.
