Pancakes (Frittatine Imbottite) Recipe
Ingredients
450 g/1lb/4 cups minced
(ground) beef
1 onion, chopped
1 garlic clove, crushed
2.5 ml/1/2 tsp chili
powder
15 ml/1 tbsp tomato
puree (paste)
150 ml/2/3 cup
beef stock
Salt and freshly ground
black pepper
8 cooked pancakes or:
75 g/3 oz/3/4 cup plain
(all-purpose) flour
1 egg, beaten
90 ml/6 tbsp milk
60 ml/4 tbsp oil
Method:
Place the mince and the onion in a saucepan and fry
(sauté) until brown. Stir in the crushed garlic,
chili and tomato puree.
Add the stock and bring to
the boil. Season with the salt and pepper and cover
with a lid. Simmer for 25 minutes.
To make the
pancakes: beat the flour, egg and milk together.
Allow to stand for 10 minutes then beat again.
Heat
a little of the oil in a frying pan (skillet) and
pour in enough mixture to coat the base of the pan.
Cook for 2 minutes on each side and slide on to a
warm plate.
Continue cooking the remaining pancakes.
Spoon a little of the spicy filling into the centre
of each pancake and fold over. Serve at once.
