Italian Appetizer (Antipasti) Recipes - Spinach Leaf Fritters (Frittelle di Foglie di Spinaci) Recipe

Ingredients

  • 450 g/1lb fresh spinach leaves

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • 2.5 ml/1/2 tsp salt

  • 1 egg

  • 90 ml/6 tbsp milk

  • 2.5 ml/1/2 tsp bicarbonate of soda (baking soda)

  • 45 ml/3 tbsp lemon juice

  • 15 ml/1 tbsp olive oil

  • Salt and freshly ground black pepper

  • Oil for deep-frying


Method:

  1. Remove the stalks from the spinach. Place the flour and salt in a bowl and beat in the egg, milk and bicarbonate of soda.

  2. Place the lemon juice, olive oil, salt and pepper in a bowl. Dip the spinach leaves in this mixture and press 4 leaves together.

  3. Drain on kitchen paper and dip in the batter. Heat the oil for frying.

  4. Quickly drop each bundle of battered leaves into the hot oil and deep-fry for 1 minute until golden.

  5. Drain on kitchen paper and keep hot while cooking the remainder. Season with salt and pepper and serve with the marinade.
