Ingredients

50 g/2 oz/1/2 cup
Parmesan cheese, grated
-
50g/2 oz ham
-
1.5 ml/1/4 tsp grated
nutmeg
-
20 large olives,
stoned (pitted)
-
15 ml/1 tbsp plain
(all-purpose) flour
-
1 egg, beaten
-
50 g/2 oz/1 cup
breadcrumbs
-
Oil for frying
Method:
-
Mince the ham and add the grated cheese and nutmeg.
Fill the olives with the mixture.
-
Dip each of the
olives, first in the flour, then in the beaten egg
and lastly in the breadcrumbs.
-
Fry (sauté) in hot
oil and drain thoroughly. Serve hot or cold.
