Italian Appetizer (Antipasti) Recipes - Stuffed Fried Olives (Olive Ripiene) Recipe

Ingredients

  • 50 g/2 oz/1/2 cup Parmesan cheese, grated

  • 50g/2 oz ham

  • 1.5 ml/1/4 tsp grated nutmeg

  • 20 large olives, stoned (pitted)

  • 15 ml/1 tbsp plain (all-purpose) flour

  • 1 egg, beaten

  • 50 g/2 oz/1 cup breadcrumbs

  • Oil for frying


Method:

  1. Mince the ham and add the grated cheese and nutmeg. Fill the olives with the mixture.

  2. Dip each of the olives, first in the flour, then in the beaten egg and lastly in the breadcrumbs.

  3. Fry (sauté) in hot oil and drain thoroughly. Serve hot or cold.
