Italian Appetizer (Antipasti) Recipes - Stuffed Olive Puffs (Soffi di Olive Ripiene) Recipe

Ingredients

  • 100 g/4 oz/1/2 cup margarine, softened

  • 225 g/8 oz/2 cups hard cheese, grated

  • 350g/12 oz/3 cups self-raising (self­rising) flour

  • 5 ml/1 tsp paprika

  • 25 stuffed olives, drained and dried


Method:

  1. Cream the margarine and cheese together. Add the flour and mix in with the hands.

  2. Stir in the paprika and add enough water to form a soft dough. Chill the dough for 10 to 20 minutes.

  3. Mould a small piece of pastry around each dry olive. Chill overnight.

  4. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 10 to 12 minutes.
