Italian Appetizer (Antipasti) Recipes - Sweet and Sour Carrots (Carote in Agrodolce) Recipe

Ingredients

  • 4 carrots, grated

  • 1 onion, chopped

  • 15g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 25 g/1/4 cup plain (all-purpose) flour

  • 10 ml/2 tsp sugar

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp wine or tarragon vinegar

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Cook the carrots and onions in boiling, salted water for 15 minutes. Drain, keep warm and reserve the liquid.

  2. Heat the butter in a saucepan, blend in the flour and cook for 1 minute.

  3. Gradually add enough of the carrot liquid to blend to a smooth sauce, stirring all the time. Stir in the sugar, pepper and vinegar.

  4. Arrange the carrots and onions on a dish, pour over the sauce and garnish with the chopped parsley.
