Sweet and Sour
Carrots (Carote in Agrodolce) Recipe
Ingredients

4 carrots, grated
-
1 onion, chopped
-
15g/1/2 oz/1 tbsp
unsalted (sweet) butter
-
25 g/1/4 cup plain
(all-purpose) flour
-
10 ml/2 tsp sugar
-
Salt and freshly ground
black pepper
-
15 ml/1 tbsp wine or tarragon vinegar
-
15 ml/1
tbsp chopped fresh parsley
Method:

Cook the carrots and onions in boiling,
salted
water for 15 minutes. Drain, keep warm and reserve
the liquid.

Heat the butter in a saucepan, blend in
the flour and cook for 1 minute.

Gradually add enough
of the carrot liquid to blend to a smooth sauce,
stirring all the time. Stir in the sugar, pepper
and vinegar.

Arrange the carrots
and onions on a
dish, pour over the sauce and
garnish with the chopped parsley.
