Almond Macaroons (Amaretti) Recipe
Ingredients

100g/1 cup
ground almonds
-
175 g/6 oz/1/4 cup caster (superfine) sugar
-
2 egg whites,
whisked until stiff
-
A few drops almond
essence (extract)
-
20 split almonds
-
Unsalted (sweet)
butter, for greasing

Rice paper
Method:
-
Place the ground almonds and sugar in a bowl and
whisk in the egg whites.

Add the almond essence and
form into small balls. Place on a greased baking
sheet lined with rice paper.

Flatten each ball
slightly and place a split almond on top.
-
Bake in a
preheated oven at 180°C/350°F/gas mark 4 for 20
minutes until golden brown. Leave to cool.
-
Cut
around each macaroon with scissors and store in an
airtight container.
