Italian Bread and Biscuits Recipes - Almond Macaroons (Amaretti) Recipe

Ingredients

  • 100g/1 cup ground almonds

  • 175 g/6 oz/1/4 cup caster (superfine) sugar

  • 2 egg whites, whisked until stiff

  • A few drops almond essence (extract)

  • 20 split almonds

  • Unsalted (sweet) butter, for greasing

  • Rice paper


Method:

  1. Place the ground almonds and sugar in a bowl and whisk in the egg whites.

  2. Add the almond essence and form into small balls. Place on a greased baking sheet lined with rice paper.

  3. Flatten each ball slightly and place a split almond on top.

  4. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 20 minutes until golden brown. Leave to cool.

  5. Cut around each macaroon with scissors and store in an airtight container.
