Italian Bread and Biscuits Recipes - Almond Tea Bread Recipe

Ingredients

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter

  • 175 g/6 oz/3/4 cup caster (superfine) sugar

  • 3 eggs, beaten

  • 90 ml/6 tbsp warm milk

  • 750 g/6 cups plain (all-purpose) flour

  • 2.5 ml/1/2 tsp salt

  • 15 g/1/2 oz/1 tbsp easy-blend dried yeast

  • 100 g/4 oz/2/3 cup raisins

  • 10 ml/2 tsp grated lemon rind

  • 45 ml/3 tbsp melted unsalted (sweet) butter

  • 90 ml/6 tbsp fine breadcrumbs

  • 20 whole almonds

  • 30 ml/2 tbsp icing (confectioners') sugar


Method:

  1. Cream the butter and sugar together until light. Add the eggs and beat well. Stir in the milk.

  2. Mix the flour, salt and yeast and beat again. Stir in the raisins and lemon rind. Cover and allow to rise for 1 hour until double in size.

  3. Grease a large loaf tin (pan). Sprinkle with the breadcrumbs and arrange the almonds in the bottom of the tin.

  4. Knead the dough and place in the prepared tin. Allow to rise for a further 30 minutes until it reaches the top of the tin.

  5. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 25-30 minutes. Allow to stand for 5 minutes before removing from the tin.

  6. Leave to cool on a wire rack and lightly sift icing sugar over the top.
