Sift the flour and salt into a bowl and stir in the
yeast. Stir in the oil. Mix with enough water to
form a soft dough.

Turn the dough on to a floured
board and knead for 10 minutes. Return the dough to
the bowl and cover with Clingfilm (plastic wrap).

Allow to rise for 2 hours in a warm place. When the
dough has doubled its size, knead again for 2
minutes.

Form into two round loaf shapes and place
on a baking sheet. Set aside for 30 minutes.

Brush
with olive oil and bake in a preheated oven at
200°C/400°F/gas mark 6 for 30 minutes.

Turn out and
cool on a wire rack before serving.
