Italian Bread and Biscuits Recipes - Gorgonzola Savouries (Biscotti al Gorgonzola) Recipe

Ingredients

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 350 g/12 oz Gorgonzola cheese, crumbled

  • 225 g/8 oz/2 cups plain (all-purpose) flour, sifted

  • 1 egg, beaten

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp finely chopped fresh rosemary

  • Anchovy Dip, to serve


Method:

  1. Cream the butter until soft and crumble in the cheese. Blend well and gradually add the flour, egg, salt, pepper and rosemary.

  2. Knead the mixture to form a soft, but not sticky, dough and roll out on a floured surface to a rectangle about 5 mm/1/4 in thick.

  3. Cut the biscuits into shapes and lay on a baking sheet. Bake in a preheated oven at 220°C/425°F/gas mark 7 for 10-12 minutes until brown.

  4. Remove from the baking sheet and allow to cool before serving with Anchovy Dip.
