Gorgonzola
Savouries (Biscotti al Gorgonzola) Recipe
Ingredients

50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
350 g/12 oz
Gorgonzola cheese, crumbled
-
225 g/8 oz/2 cups
plain (all-purpose) flour, sifted

1 egg, beaten
-
Salt and freshly
ground black pepper
-
15 ml/1 tbsp finely
chopped fresh rosemary

Anchovy Dip, to serve
Method:

Cream the butter until soft and crumble in the cheese. Blend well and
gradually add the flour, egg, salt, pepper and
rosemary.

Knead the mixture to form a soft, but not
sticky, dough and roll out on a floured surface to
a rectangle about 5 mm/1/4 in thick.

Cut the
biscuits into shapes and lay on a baking sheet. Bake
in a preheated oven at 220°C/425°F/gas mark 7 for
10-12 minutes until brown.

Remove from the baking
sheet and allow to cool before serving with Anchovy
Dip.
