Italian Bread and Biscuits Recipes - Gruyere Sticks (Bastoncini alla Groviera) Recipe

Ingredients

  • 400 g/14 oz puff pastry (paste)

  • 45 ml/3 tbsp tomato puree (paste)

  • Freshly ground black pepper

  • 30 ml/2 tbsp milk

  • 45 ml/3 tbsp Gruyere (Swiss) cheese, grated

  • 15 ml/1 tbsp sea salt


Method:

  1. Roll out the pastry to a rectangle 5 mm/1/4 in thick. Spread the top with the tomato puree and season with the pepper.

  2. Fold the pastry in half width ways, brush with milk and sprinkle over the Gruyere cheese and half the sea salt. Fold over and roll out again.

  3. Cut the pastry into 1 cm/1/2 inch wide strips and gently twist each one several times.

  4. Place on a baking sheet. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 10 minutes until crisp and golden brown.

  5. Sprinkle with the sea salt and cool on a wire rack.
