Italian Bread and Biscuits Recipes - Herb Pastry (Pasta agli Odori) Recipe

Ingredients

  • 175 g/6 oz/1 1/2 cups plain (all-purpose) flour

  • 1.5 ml/1/4 tsp salt

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter

  • 15 ml/1 tbsp snipped fresh chives

  • 15 ml/1 tbsp chopped fresh parsley

  • 5 ml/1 tsp chopped fresh thyme

  • 2 egg yolks

  • 45-60 ml/3-4 tbsp water


Method:

  1. Sift the flour and salt into a large bowl. Add the butter and rub into the flour until the mixture resembles fine breadcrumbs.

  2. Stir in the herbs and egg yolks and blend in the water, a little at a time to form a soft, but not sticky, dough.

  3. Roll out the dough on a lightly floured surface and use to line a 23 cm/9 in flan dish (pie pan). Use as required.
