Italian Bread and Biscuits Recipes - Parmesan Pesto Twists (Formaggini Attoreighati al Pesto Rosso) Recipe

Ingredients

  • 400 g/14 oz ready-made puff pastry

  • 45 ml/3 tbsp Red Pesto

  • Freshly ground black pepper

  • 30 ml/2 tbsp milk

  • 45 ml/3 tbsp Parmesan cheese, grated


Method:

  1. Roll out the pastry to a rectangle 5 mm/1/4 in thick. Spread the top with the pesto and season with the pepper.

  2. Fold the pastry in half width ways, brush with milk and sprinkle over the Parmesan cheese, grated.

  3. Cut the pastry into 1  cm/1/2 in wide strips and gently twist each one several times.

  4. Place on a baking sheet. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 10 minutes until crisp and golden brown.

  5. Cool on a wire rack and store in an airtight container.
