Italian Bread and Biscuits Recipes - Quick Cinnamon Bread (Pane con Canella Alla Svelta) Recipe

Ingredients

  • 450 g/1 lb/4 cups plain (all-purpose) flour

  • 10 ml/2 tsp baking powder

  • 2. 5 ml/1/2 tsp salt

  • 3 eggs, lightly beaten

  • 225 g/8 oz/1 cup caster (superfine) sugar plus

  • 15 ml/1 tbsp

  • 175 g/6 oz/3/4 cup unsalted (sweet) butter, melted, plus extra for greasing

  • 10 ml/2 tsp vanilla essence (extract)

  • 175 g/6 oz/1 1/2 cups ground almonds

  • 15 ml/1 tbsp vegetable oil

  • 5 ml/1 tsp ground cinnamon


Method:

  1. Grease a large baking sheet and set aside. Sift the flour, baking powder and salt into a large bowl.

  2. Whisk the eggs in a separate bowl and whisk in the sugar, butter and vanilla essence.

  3. Fold in the ground almonds and add this mixture to the flour. Mix to a stiff dough.

  4. Turn out and knead lightly. Form the dough into a ball and place on the baking sheet.

  5. Brush the loaf over with oil and sprinkle with the 15 ml/1 tbsp sugar and the cinnamon.

  6. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 45 minutes. Transfer to a wire rack to cool before serving.
