Bread (Pane con Canella Alla Svelta) Recipe
Ingredients

450 g/1 lb/4 cups
plain (all-purpose) flour
-
10 ml/2 tsp baking
powder
-
2. 5 ml/1/2 tsp salt
-
3 eggs, lightly
beaten
-
225 g/8 oz/1 cup
caster (superfine) sugar plus
-
15 ml/1
tbsp
-
175 g/6 oz/3/4 cup
unsalted (sweet) butter,
melted, plus extra for greasing

10 ml/2
tsp vanilla essence (extract)

175 g/6 oz/1 1/2 cups
ground almonds
-
15 ml/1 tbsp vegetable oil
-
5 ml/1 tsp ground
cinnamon
Method:

Grease a large baking
sheet and set aside. Sift the flour, baking powder
and salt into a large bowl.

Whisk the eggs in a
separate bowl and whisk in the sugar, butter and
vanilla essence.

Fold in the ground almonds and add
this mixture to the flour. Mix to a stiff dough.

Turn out and knead lightly. Form the dough into a
ball and place on the baking sheet.

Brush the loaf
over with oil and sprinkle with the 15 ml/1 tbsp
sugar and the cinnamon.

Bake in a preheated oven at
180°C/350°F/gas mark 4 for 45 minutes. Transfer to a
wire rack to cool before serving.
