Pastry (Pasta di Salerno) Recipe
Ingredients

75 g/3 oz/1/3 cup
unsalted (sweet) butter
-
1 onion, thinly
sliced
-
100 g/4 oz/1 cup
plain (all-purpose) flour
-
2.5 ml/1/2 tsp
cayenne
-
100 g/4 oz/1/2 cup
cooked mashed potato
-
Salt and freshly
ground black pepper
-
4 ripe tomatoes, sliced
-
50 g/2 oz sun-dried tomatoes, finely chopped
-
150 g/5 oz
Mozzarella cheese, sliced
-
25 g/1 oz black olives,
stoned (pitted)
Method:
-
Melt 25 g/1 oz/2 tbsp of the butter in a saucepan
and fry (sauté) the onion for 3 minutes until
softened. Leave to cool.

Put the flour and cayenne
in a bowl and rub in the remaining butter until the
mixture resembles breadcrumbs.

Stir in the cooked
onion and the mashed potato and season with salt and
pepper. Mix to a soft dough adding a little water if
necessary.

Press the dough into a greased 23 cm/9 in
flan tin (pie pan) and cover with the tomato slices.

Sprinkle over the chopped tomatoes and top with the
slices of cheese.

Scatter over the olives and bake
in a preheated oven at 200°C/400°F/gas mark 6 for 20
minutes until the cheese has melted and the top is
golden. Serve hot or cold.
