Italian Bread and Biscuits Recipes - Salerno Pastry (Pasta di Salerno) Recipe

Ingredients

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter

  • 1 onion, thinly sliced

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • 2.5 ml/1/2 tsp cayenne

  • 100 g/4 oz/1/2 cup cooked mashed potato

  • Salt and freshly ground black pepper

  • 4 ripe tomatoes, sliced

  • 50 g/2 oz sun-dried tomatoes, finely chopped

  • 150 g/5 oz Mozzarella cheese, sliced

  • 25 g/1 oz black olives, stoned (pitted)


Method:

  1. Melt 25 g/1 oz/2 tbsp of the butter in a saucepan and fry (sauté) the onion for 3 minutes until softened. Leave to cool.

  2. Put the flour and cayenne in a bowl and rub in the remaining butter until the mixture resembles breadcrumbs.

  3. Stir in the cooked onion and the mashed potato and season with salt and pepper. Mix to a soft dough adding a little water if necessary.

  4. Press the dough into a greased 23 cm/9 in flan tin (pie pan) and cover with the tomato slices.

  5. Sprinkle over the chopped tomatoes and top with the slices of cheese.

  6. Scatter over the olives and bake in a preheated oven at 200°C/400°F/gas mark 6 for 20 minutes until the cheese has melted and the top is golden. Serve hot or cold.
