Italian Bread and Biscuits Recipes - San Severo Pastries (Pasticcine San Severo) Recipe

Ingredients

  • 100 g/4 oz/1/2 cup unsalted (sweet)   butter

  • 100 g/4 oz/1 cup plain (all-purpose)   flour

  • 50 g/2 oz/1/3 cup semolina (cream of wheat)

  • 1.5 ml/1/4 tsp salt

  • 1.5 ml/1/4 tsp dry mustard

  • 100 g/4 oz/1 cup Parmesan cheese, grated

  • Olive and Basil Pilte, to serve


Method:

  1. Blend the butter, flour, semolina, salt, mustard and Parmesan in a food processor until smooth.

  2. Knead on a floured board lightly sprinkled with semolina. Roll out and cut into approximately 40 shapes with a biscuit cutter.

  3. Place on a baking sheet and cook in a preheated oven at 180°C/350°F/gas mark 4 for 20 minutes until golden brown.

  4. Transfer to a rack and cool. Store in an airtight tin and serve with Olive and Basil Pate.
