Italian Bread and Biscuits Recipes - Sweet Almond Biscuits (Biscotti Dolci di Mandorla) Recipe

Ingredients

  • 225 g/8 oz/2 cups ground almonds

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 1 egg, beaten

  • 5 ml/1 tsp lemon juice

  • Milk if necessary

  • A little unsalted (sweet) butter, for greasing


Method:

  1. Beat together the almonds with the sugar and mix in the flour.

  2. Beat the egg and lemon juice into the mixture and knead to a paste. If the dough is too stiff add a little milk.

  3. Form the dough into small round balls and place a little apart on a greased baking sheet.

  4. Bake in a preheated oven at 160°C/325°F/gas mark 3 for 8 minutes until brown and crisp.
