Italian Bread and Biscuits Recipes - Walnut Delights (Delizie Noci) Recipe

Ingredients

  • 175 g/6 oz/3/4 cup light brown sugar

  • 250 ml/8 fl oz/1 cup water

  • 5 ml/1 tsp vinegar

  • 2 egg whites

  • 5 ml/1 tsp vanilla essence (extract)

  • 200 g/7 oz/1 3/4 cups chopped walnuts


Method:

  1. Mix the sugar, water and vinegar together in a saucepan and cook over a moderate heat, without stirring, until a small spoonful dropped in cold water forms a hard ball.

  2. While the mixture is cooking, whisk the egg whites in a large bowl until stiff.

  3. When the hot mixture reaches the hard ball stage, remove from the heat and pour slowly over the egg whites, beating constantly.

  4. Add the vanilla essence and walnuts and continue beating until creamy and stiff.

  5. Drop teaspoonfuls on to a greased baking sheet and bake in a preheated oven at 180°C/350°F/gas mark 4 for 10-12 minutes.
