Italian Bread and Biscuits Recipes - Yeast Pastry (Pasta Lievitata) Recipe

Ingredients

  •  225 g/8 oz plain (all-purpose) flour

  • 2.5 ml/1/2 tsp salt

  • 2.5 ml/1/2 tsp sugar

  • 5 ml/1 tsp easy-blend dried yeast

  • 15 ml/1 tbsp olive oil or melted

  • unsalted (sweet) butter Hand-hot water


Method:

  1. Mix the flour, salt, sugar and yeast in a bowl. Stir in the oil or butter.

  2. Mix with enough hot water to form a soft, but not sticky, dough. Knead gently on a lightly floured surface for 5 minutes.

  3. Return to the bowl and cover with Clingfilm (plastic wrap). Leave to rise in a warm place for 45 minutes.

  4. Re-knead, roll out thinly and use as required.
