Italian Desserts Recipes - Almond Cake (Torga di Mandorla) Recipe

Ingredients

  • 350 g/12 oz/3 cups plain (all-purpose) flour, sifted

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 1 0 ml/2 tsp baking powder

  • 2.5 ml/1/2 tsp salt

  • 1 egg

  • 150ml/2/3 cup milk

  • 2.5 ml/1/2 tsp almond essence (extract)

  • 40 g/3 tbsp unsalted (sweet) butter, melted

  • 1 egg white, lightly beaten

  • 25 g/1/4 cup chopped almonds


Method:

  1. Mix the flour, sugar, baking powder and salt together and set aside.

  2. Place the egg in the mixing bowl, and, using an electric mixer, begin mixing on a low speed.

  3. Gradually add the milk, almond extract and melted butter. Add the dry ingredients and continue mixing until the mixture is smooth.

  4. Scrape into a greased 20 cm/8 in cake tin (pan). Brush the cake top with egg white and sprinkle with chopped almonds.

  5. Duke in a preheated oven at 220°C/425°F/gas mark 7 for about 40 minutes until risen, golden and a skewer inserted in the centre comes out clean.
